Pasta with Roasted Red Pepper & Sun-dried Tomato Cream Sauce by

Ingredients

1lb. Pasta (penne)
1/2 cup sundried tomatoes ( dry packed) soaked in boiling water for 20 min.
4 roasted peppers
2 T. Butter
1 cup half & half
1/2 cup grated Romano cheese
S&P to taste

Instructions

Drain tomatoes and place in processor with rstd. peppers. Pulse til smooth.
Melt butter in skillet over med. heat. Add tomato mixture. Cook while stirring for 2 minutes. Add half&half. Cook another 2-3 minutes. Add pasta, stir, then add cheese and salt &P to taste. Serve immediately
Makes 4 to 8 servings
*** Sliced, grilled chicken breast can be added just before serving
