Oatmeal Brulee with finger cream by

Ingredients
Cream:
1/2 cup heavy whipping cream
2 slices ginger root
1 cinnamon stick
1 tablespoon grated orange peel
3 tablespoon maple syrup
1/8 teaspoon nutmeg
Oatmeal:
4 cups water
2 cups oats
1/4 cup dried apricots
1/4 cup dried cherries
1/2 teaspoon salt
3 tablespoon brown sugar
2 tablespoon butter
1 cup unsweetened rasp
1/4 cup sugar
1/2 cup
heavy whipping cream

Instructions
Combine cream, ginger, cinnamon, orange peel
Boil then simmer for 10 minutes covered
Strain and remove 1/4 cup sugar from heat and discard solids
Stir in syrup and nutmeg
Boil water
Stir in oats, apricots, cherries, salt
Reduce to medium and cook for 5 minutes
Remove from heat, stir in brown sugar
1/4 cup cream and cover for 2 minutes
Grease 4 10 ounce broiler safe ramekins with butter
Place raspberry in ramekins
Spoon oatmeal over and sprinkle with sugar
Broil 7 to 9 minutes
Serve with ginger cream
