Bourbon-Laced Tipsy Chicken with Peaches by

Ingredients

4 chicken breasts
1/2 teaspoon salt
1/8 teaspoon pepper
2 tablespoon butter
2 tablespoon bourbon
1 onion finely chopped
1 teaspoon paprika
1 and 1/2 cup green onions
1/2 cup OJ
1 cup chopped peaches

Instructions

Preheat oven to 400
Sprinkle chicken quarters with salt and pepper
Place in 13x9 pan and set aside
In medium skillet, melt butter over medium heat
Add onion, stirring until translucent (~5 minutes)
Add paprika and all of grn(?) onions except 1 tablespoon and cook for 4 minutes
Spoon onion mixture over chicken, spoon OJ and bourbon
Place in oven for 30 minutes, turning and basting occasionally
Remove from oven, spoon peaches over top, return to oven for 15 to 20 minutes
