Pesto or Olive Tapenade Palmiers By: Chef Victoria by

Ingredients

1 package of frozen puff pastry, defrosted
¼ cup good quality pesto or olive tapenade
½ cup crumbled goat or feta cheese
Salt and pepper

Instructions

Roll puff pastry to 9 ½ x 11 ½. Spread each piece with ½ the pesto or tapenade and cheese. Season with salt and pepper. Fold the short end halfway to the center until they almost touch. Fold one side over the other and press lightly. Place on a baking sheet lined with parchment paper or a silpat. Repeat with the other sheet of puff pastry. Cover with plastic wrap and chill for at least 30 minutes.
Cut the puff pastry rolls in 1/4 inch thick slices and place them face up 2 inches apart on the parchment or silpat lined baking sheets. Bake in a 400 degree oven until golden brown, 12-14 minutes. Serve warm.
