Wild Rice Chowder by

It is important that the ham not have a strong flavor because that will affect the overall taste. I buy a small Frick's Gourmet Ham and chop it up finely. DO NOT USE SMOKED HAM.
Ingredients
2 T butter
1 lb. carrots, chopped
5 or 6 stalks celery, chopped
1 yellow onion, diced
1 1/4 lb. ham, chopped, no flavorings (not smoked or maple)
8 oz. wild rice
6 c chicken broth
6 c water
1 c whipping cream
3 bay leaves

Instructions
Saute carrots, celery, onion in butter, until sweaty (8-10 mins.)
Add wild rice, ham, chicken broth, water, bay leaves
Bring to a boil, then simmer for an hour
Remove bay leaves
Add whipping cream slowly while stirring
Remove about 3 cups of the soup and blend finely; return to soup
