Fluffy Pumpkin Cheesecake Pie by

Ingredients

2 pkg (8 oz ea) cream cheese - softened*
2/3 C sugar
2 tsp pumpkin pie spice**
2 eggs
1 Can pumpkin (15 oz)
1 Keebler ready crust - extra serving size

Instructions

*to soften cream cheese - microwave on high for 15-20 seconds
**you can use 1 tsp cinnamon, 1/2 tsp ground ginger, 1/4 tsp ground cloves in place of pumpkin pie spice if desired

In large mixing bowl beat cream cheese on medium until fluffy, add sugar and spice, beat until well blended

Add eggs, one at a time, mixing until just combined after each addition. Stire in pumpkin.

Pour into crust

Bake at 350 for 35-40 minutes or until center is almost set

Cool for an hour on wire rack, refrigerate for at least 3 hours
