Pakistani masala rice by

Source: I am pakistani and usually make this.

Raita is kind of pakistani sauce that is eaten with rice or samosas or other fried things. If u want to serve raita with these masala rice get the recipe on my page.

Ingredients

For Rice:
1.White basmati rice- 1 glass( washed and soaked for 20 min)
2.water- 2 glasses
3.salt- 2 tbsp
4. Potato-1 ( diced)
5. Cumin seeds- 3tbsp
6.Onion small- quarter part ( chopped)
7. Vinegar-1 tbsp
8.oil- 10 tbsp

For masala:
1. Carrots: 1 large (chopped/ diced)
2.capsicum: 1 large( chopped/diced)
3.spring onions: half cup ( chopped)
4.chicken boneless: half cup( cut into 1x1 inch cubes)
5.soy dauce: 3-4 tbsp
6.red chilli sauce: 6-7 tbsp
7.black pepper: 1 tsp
8. Salt: half tsp
9. Oil- 5-6 tbsp
10. Ketchup/ tomato paste- 5-6 tbsp

Instructions

Wash the rice and soak them, while they are being soaked cut the vegetables for masala and potatoe and onion for rice. Cut the chicken as well.

2. For making masala: take a wok and oil and warm it. Add chicken when it turns golden add in carrots and on high heat cook for 3 min while keep stirring it.
3. Add capsicum, spring onions, salt, black pepper and stir fry for 2 mins.
4. Add soy sauce, chilli sauce, ketchup and mix it ( turn the flame low)
5. Cook for two min and its ready. Put it aside.

For rice:
Heat oil and add onions when they turn golden brown add cumin seeds.
Now carefully add in water before the onions turn dark. Add salt.
When the water is boiling add potaoes and after one min drain the water of soaked rice and add them in boiling water. Wait for the water to evaporate.
When water is no longer visible turn the rice with spatula carefully(dont break rice) and see if water is at bottom. When you can see just the moisture but no water turn the flame very low so that its about to turn off. Sprinkle vinegar and put the lid on for 10 minutes.
Now the rice are ready, carefully mix them in masala so that rice dont break.
Serve hot simply or with delicious raita.
