Israel Salad by

Ingredients

6 small diced cucumbers or 3 medium
4 diced Roma tomatoes
1 cup chopped parsley
1/2 cup chopped mint leaves
1/2 cup olive oil
2 tablespoons lemon juice
1/3 cup diced onion, (optional)
salt and pepper to taste

Instructions

Vegetables are always diced but size of dice depends on personal preference. Combine all ingredients together in bowl and season to taste with salt and pepper. Blend well.
