Beth’s Quiche Lorraine by

Ingredients

1/2 pound bacon- I use nueshke's and it is really good
1/2 cup whole milk
1 cup heavy cream
3 eggs
1/2 teaspoon salt
1/2 teaspoon pepper ( I don't use any )
1/8 teaspoon ground nutmeg
1 cup grated gruyere cheese or more( 1 1/2 cups )
1 heaping tablespoon chopped chives ( 2 tablespoons or more)
1 pie crust- I now use Pillsbury pie crusts that come in a slim box found in the ready to make cabinet by cookies- they are not frozen and are ready to use once out of the box. They are great if you don’t make your own pie crusts.

Instructions

1. Turn oven to 375
2. Cook bacon slowly and get nicely browned
3. Drain bacon on paper towels
4. chop bacon into small pieces
5. Whisk eggs in a large bowl
6. Add nutmeg, salt, pepper, and chives and whisk some more
7.. Add milk and cream and whisk vigorously to make quiche light and fluffy
8. Arrange bacon and cheese in bottom of pie crust-put cheese on bottom and bacon on top.
9.. Whisk eggs once more hard
10. Pour egg mixture gently into crust
11. Try to keep chives on top- then let the mixture rest 5-10 minutes before baking
12. Put quiche into oven and bake 1 hour or so
13.Remove quiche from oven and cool on wire rack
14. Quiche should be eaten at room temperature
