BBQ Chicken Cornbread Bake by

Ingredients

1 ( 8 1/2 -oz ) package Jiffy Corn Muffin Mix
1 egg
1/3 cup milk
2 tablespoons butter
1 red bell pepper, sliced
1 small onion, chopped
2 cups barbecued chicken, chopped or shredded ( you can also use leftover rotisserie chicken- just mix in bottled barbecue sauce)
1 cup barbecue sauce
1/2 cup corn
1 cup shredded cheddar cheese
2 green onions sliced ( optional)

Instructions

1. Preheat oven to 400 degrees. Grease an 8-inch square baking dish.

2. In a medium bowl, combine cornbread mix with egg and milk. Pour into prepared pan and bake 20 minutes or until top is lightly browned.

3. While cornbread is baking, melt butter in a skillet over medium heat. Add pepper and onion and cook until softened, about 5 minutes.

4. Reduce heat to low and add chicken, corn and barbecue sauce. Stir until heated through. Pour chicken mixture over baked cornbread . Top with cheese. Preheat broiler and place dish in oven 2 minutes, or until cheese is bubbling. Top with green onions, if using.
