Ingredients

Instant Potatoes:
Boil 1 1/2 cups water with 1/2 cup milk and 2 tbsp butter or margarine in a large saucepan. Remove from heat and whisk in 1 pouch Instant Potatoes. Let stand 1-3 min. Makes about 2 cups.

Instructions

1. Spray a 12-cup muffin pan with oil. Beat 3 eggs in a large bowl with an electric mixer until foamy. Beat in 2 cups cooled, prepared Roasted Garlic Instant Mashed Potatoes and 1/2 cup grated Parmesan. Season with black pepper. Stir in 1 chopped green onion. Scoop into prepared muffin cups. Bake at 400F until puffy and crisp, 22-25 min. Run a paring knife around edge of each cup and transfer to a platter.

2. Cook 227-g pkg sliced mushrooms, 2 cups diced carrots and 1 chopped onion in 3 tbsp butter in an oven-safe pan over medium-high for 6 min. Stir in 2 tbsp flour and cook 30 sec. Add 3 cups shredded cooked chicken, 1 cup chicken broth and 1 tbsp dried dill. Cook until sauce thickens. Stir 2 cups dry Roasted Garlic Instant Potato flakes with 1 cup flour and 2 tsp baking powder in a bowl. Mix in 1/3 cup cubed cold butter, then 1 cup milk. Scoop 1/4-cup portions over chicken mixture. Bake at 425F until golden.

3. Boil a large pot of water. Whisk 1 egg yolk with 1 cup cooled, prepared Butter & Herb Instant Mashed Potatoes in a bowl. Stir in 1/2 cup flour. Knead dough lightly. Divide in half. Roll into ropes 1-in wide. Cut each rope into 1/2-in pieces and drop into boiling water. Scoop out with a slotted spoon when they float. Toss with 1 tbsp melted butter before serving.

4. Cut 1/4-in cubes from a block of cheddar cheese - 15 cubes in total. Combine 454 g lean ground turkey with 1 beaten egg, 1/2 cup dry Roasted Garlic Instant Mashed Potato flakes and 1 tbsp chopped dill in a bowl. Scoop out 2-tbsp portions. Flatten each into a disc, place a cheese cube in centre, then roll into a ball. Cook meatballs in 1 tbsp canola oil in a large non-stick frying pan over medium, turning often, until cooked through, about 10 min.
