Spinach with Raisins and Apples by JMAK

Ingredients

2 bunches fresh spinach 2 tablespoons olive or vegetable oil 1/4 cup raisins 1/4 cup pine nuts 1 apple, peeled and cubed 3 tablespoons shallots, chopped 1/4 teaspoon salt

Instructions

Wash and dry spinach.

Heat oil in large dutch oven or saute pan over medium heat. Cooks raisins, pine nuts, apple and shallots in oil about 5 minutes, stirring occasionally, until raisins are plump. Stir in salt. Gradually add spinach. Toss until spinach is just wilted. Serve immediately.
