Red Beans and Sausage by Jonathan

Ingredients

1 lb red beans, soaked overnight 3 celery ribs, chopped 1 green pepper, chopped 1 bay leaf 1 garlic clove 1 onion, chopped 2 tbsp parsley dash cayenne pepper 1lb smoked sausage, sliced

Instructions

1. In a dutch oven, add sliced sausage, celery, onion, garlic, cayenne pepper, and bell pepper.
2. Cook until celery and onion have softened.
3. Add beans and water until beans are covered.
4. Add bay leaf and parsley.
5. Cook until beans are tender and start to break-up.
6. Serve over rice.
