Mama’s Two Egg Cake by Wanda Dickson

Mama used this recipe for her strawberry shortcake and coconut cake.

Ingredients

2 eggs 1 1/2 cups sugar 1/2 cup shortening 2 1/3 cup self rising flour 1 1/4 cup milk 1 t vanilla

Instructions

Beat eggs untill fluffy on medium speed.
Gradually add sugar; beat well.
Add shortening; beat well.
Add flour alternately with milk.
Add vanilla, mix in well.
Pour into 2 greased and floured 9 inch pans.
Bake 350 degrees for 25-30 minutes.
