German Apple Pancake by trublmkr

Ingredients

1 Large Granny Smith Apple or 2 medium Granny Smith Apples peeled and cut into 1/4 slices 3-4 tablespoons butter 4 tablespoons brown sugar 2 teaspoons cinnamon 1/2 teaspoon nutmeg 1/2 teaspoon allspice 2 tablespoons granulated sugar 3/4 cup all-purpose flour 3 eggs 1 cup of whole milk 1 teaspoon baking powder 1/2 teaspoon vanilla pinch of salt

Instructions

Preheat oven to 350 degrees. Take your pie tin/pie plate and spray it with cooking spray or grease it with butter. Evenly divide the 3-4 tablespoons of butter over the bottom of the pie tin. Now evenly distribute the brown sugar and spices on top of the butter. Cover the butter/sugar mixture with a single layer of peeled apple slices. Place in the oven for 7-12 minutes or until the the sugar, butter, and apples begin to brown and caramelize.

Meanwhile, measure out the flour, granulated sugar, salt, and baking powder in a bowl, whisk together. In a separate bowl beat together the eggs and milk until combined, then add to the dry ingredients. Mix lightly until just combined.

Pour the pancake mixture on top of the caramelized apples and return to the 350 degree oven. Bake for 30-45 minutes. (The cooking time depends on what kind of pie tin you use) The pancake is done when it has puffed up and is well browned. You could use a knife or toothpick to check if the batter is done too.

Little tip for serving this pancake. Place a plate upside down on top of the pie tin, then using hot pads flip the plate and pie tin pressed together so the pancake falls out of the pie tin and is now on the plate. If you greased your pie tin well enough the pancake should fall right out. Enjoy this hot.
