Red Pepper Cashew Cream Pasta by rebe29cca

Feel free to add as many veggies/greens as you want or different kinds of veggies.

Ingredients

1 onion, diced small 3-4 cloves garlic, minced 1 pkg frozen broccoli (mostly cooked or thawed) Spinach (as much as you like) 1 Red or Green pepper or both 3-4 leaves Basil, chopped Olives 1 pkg pasta (I use the brown rice pasta from TJs and cook for 7 min) Sauce: 1 cup presoaked & rinsed cashews 1 cup plant milk Roasted red pepper at least 1 or 1.5

Instructions

Dry saute onions and if needed add a little water. When they are cooked enough add garlic then add enough water so oinions and garlic don't burn. Add sliced/chopped pepper, broccoli, and spinach and cook on low heat until spinach is cooked. While this is cooking, blend your ingredients for the sauce. Then add the cream sauce to the pot of veggies. Add the cooked pasta, basil and olives.
