Orzo with Cinnamon Brown Butter and Parsley by museumgrl

This is wonderful Leg of Lamb with Thyme and Allspice, Spiced Yogurt Dip with Pita and Peppers, Roasted Zucchini and Radishes, Arugula and Radicchio with Dates and Feta, and Almond Cake with Rose Water.


1 lb. orzo 1/2 stick unsalted butter 2 tbls. olive oil 1/4 t. cinnamon 1/4 t. salt 3/4 cup chopped parsley


Cook orzo in boiling, salted water until just tender. Melt butter in small pan and simmer until golden brown for about 5 minutes. Remove from heat, stir in oil, cinnamon, and pepper. Mix into orzo and add chopped parsley.
