Rigatoni with Tomatoes and Vodka by museumgrl

Ingredients

2 tablespoons butter 1 small onion, chopped 2 garlic cloves, minced 1 tablespoon Italian spices 16 ounces canned chopped plum tomatoes 3 ounces prosciutto, sliced thickly and cut in 1" pieces 1/2 cup vodka 3/4 cup whipping cream 1 cup grated parmesan cheese salt and pepper 8 ounces rigatoni bunch of basil, cut in ribbons red pepper flakes, to taste

Instructions

Saute onion and garlic in butter until soft, about 4 minutes. Add tomatoes and prosciutto, cook about 10 minutes. Add vodka, cook five minutes. Add cream and 1/2 cup parmesan and stir to incorporate and blend. Season with salt and pepper. Drain pasta and incorporate sauce into pasta. To serve, garnish pasta with basil, cheese, and red pepper flakes, if desired.
