Hearty Zucchini Soup by
1 tbs olive oil 1 med. onion (chopped) (1 1/2 c) 2 minced garlic cloves (1/2 tsp dried) 2 tsp curry powder 1 large potato (peeled and diced) 2 medium zucchini, diced 4 c chicken broth 1/2 tsp salt 1/4 tsp freshly ground black pepper
In medium saucepan, heat oil over medium heat. Add onion, cook about 7-8 minutes, stirring occasionally. Add garlic and curry powder; cook, stirring, until fragrant (about 7 minutes). Add remaining ingredients; heat to boiling. Reduce heat and simmer, covered 20 minutes.
