Simple sausage casserole recipe by
Ingredients
drizzle of olive oil
1 onion, finely sliced
8 reduced fat sausages
3 garlic cloves, finely chopped
750g Frozen Tesco Casserole Vegetables
400g can chopped tomatoes
500ml pork or beef stock
few sprigs thyme
Potatoes to serve
Instructions
1. Heat the oil in a wide saucepan and fry the onion and sausages over a medium heat for about 5 minutes,
2. Stir until the onions are soft and the sausages are browned all over.
3.Add the garlic, cook briefly
4. Then add the vegetables, tomatoes, stock and thyme and bring to the boil.
5. Simmer over a gentle heat for 20-25 minutes until the sausages are cooked through.
6.Season with black pepper and serve with mashed potato or pasta.
