Cauliflower With Cheese Sauce by Lori Bogan-Potts

Ingredients

1 large head chopped cauliflower (also can use a large bunch broccoli) 2 tablespoons butter 2 tablespoons flour 1 tablespoon dry mustard 1/4 teaspoon salt Dash of red pepper Bread crumbs 1 cup milk 1 cup shredded sharp cheddar cheese 5 drops red pepper sauce

Instructions

Cook cauliflower (or broccoli) in saltwater in 5 qt. pot until tender. Drain well and place in casserole dish.

Heat butter over low heat until melted in a small sauce pan. Blend in flour, mustard, salt and pepper. Cook over low heat, stirring constantly, until mixture is smooth and bubbly; Stir in milk, slowly. Heat to boiling, stirring constantly, for 1 minute. Stir in cheese and pepper sauce. Cook and stir, over low heat, until cheese melts. Pour cheese sauce on top.

Cover with bread crumbs and place in over and bake for 30 minutes at 350°.

Put broiler on and brown top before serving.
