Gluten-Free Chicken Charlie by lil

Ingredients

CHICKEN SAUCE 1/4 c rice flr 2 c COLD chicken broth 2 c minced cooked chicken 1 c minced mixed veggies(your choice- I like California blend) salt RICE 4 c chicken broth 2 c uncooked rice

Instructions

RICE
Bring 4 c chicken broth to a boil.
Add 2 c uncooked rice.
Reduce heat to med-low and cook, covered, for 25 min

CHICKEN SAUCE
Put rice flour in small bowl.
Gradually stir in 2 c cold chicken broth.
Put mixture in med saucepan over med-high heat, stirring constantly til mixture reaches gravy consistancy.
Add minced veggies and chicken.

Dish up desired ammount of rice, and pour chicken sauce liberally on top. Serve and enjoy!
