Pineapple Upside Down Cake by kathleenjensen

Ingredients

1/2 cup butter 1 cup packed brown sugar 1 - 20 oz. can pineapple slices (well drained) 1 pillsbury "Moist Supreme" yellow cake mix 1 cup water 3 large eggs 1/3 cup pure vegetable oil

Instructions

1. Preheat oven to 350. Melt butter in saucepan. Stir in brown sugar. Heat till sugar dissolves. Spray 13 x 9 in pan w/ cooking spray. Pour brown sugar in pan. Place 10 pineapple rings in pan. Insert cherry in center.
2. Prepare cake batter mix - add water, oil and eggs. Electric mixer at low speed 2 minutes. Pour over fruit.
3. Bake 30-40 minutes and immediately invert onto serving platter.
