Broccoli Cheese Soup by hollowbottles



1/4 C. Butter 1/2 Onion - Chopped 16oz. Frozen chopped broccoli 2 Cans chicken or veggie broth (14.5oz) 1/2 lb. Cubed (or shredded) Cheese 1 C. Milk 1 1/2 tsp. Garlic Powder 1/3 C. Cornstarch 1/2 C. Water


Melt butter over medium heat. Cook onion in the butter until softened. Stir in broccoli and cover with chicken or veggie broth. Simmer for 10-15 mins., or until broccoli is tender. Reduce heat and stir in cheese til melted. Mix in milk and garlic powder. In a small bowl, stir cornstarch into water until dissolved. Stir into soup. Cook, stirring frequently, until thick. Remove from heat and enjoy.
