Chicken Gumbo by hollowbottles


1 Tbs. Butter 1 Large Yellow Onion - Chopped 1 Clove Garlic - Minced 1/2 Small green pepper - Cored, Seeded, and Chopped 1 Medium stalk Celery - Chopped 2 Tbs. Flour 1 Can of crushed tomatoes with juice 1 C. Chicken broth 1/4 tsp. Hot red pepper sauce 2 C. Sliced Fresh Okra (or 1 pkg. [10oz.] sliced, frozen Okra] 1 1/2 C. Cubed cooked chicken (or turkey) meat 1/2 tsp. Lemon juice


In a large saucepan, melt butter over moderate heat. Add onion, garlic, green pepper, and celery. Cook uncovered for 5 mins. or until soft. Blend in flour and cook, stirring, for 3 mins. Slowly stir in tomatoes and chicken broth, then add the hot pepper sauce. Cook, stirring constantly, until mix thickens and comes to a boil - 3-5 mins. Add Okra, return to boil, cover and cook 6-8 mins. more. Add chicken and reduce heat to low. Bring just to serving temperature, stirring occasionally (about 4 mins.) Add in lemon juice and serve.
