Cauliflower with Cheese Sauce by Elaine Remez

Ingredients

1 medium head of cauliflower 1 t. prepared mustard 3 T. mayonnaise 1 Cup cheddar cheese

Instructions

Wrap whole head of cauliflower with waxed paper or plastic wrap.
Place in glass dish and cook in microwave on high 6 to 8 minutes or until tender.
Let stand, covered, about 5 minutes.
Meanwhile, mix mustard and mayonnaise.
Remove plastic wrap and coat with the mustard-mayonnaise mixture, then top with cheese.
Put in microwave long enough to melt cheese, about 1 to 1.5 minutes on high.
