Chicken in Orange Sauce by Elaine Remez

Ingredients

1 cup orange juice 3 T. honey 1 t. Instant coffee 1 t. potato starch 1 T. oil 6 small boneless skinless chicken breast halves (1-1/2 lb.) 1 cup seedless green grapes

Instructions

Beat orange juice, honey and coffee granules in small bowl with wire whisk until well blended. Add potato starch; mix well. Set aside until ready to use.

Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook 3 minutes on each side or until golden brown on both sides. Add grapes; cook and stir 1 min.

Add orange juice mixture; cook 4 to 5 min. or until sauce is thickened and chicken is cooked through (170 degrees).

Servings: 6 Serving Size: 1 chicken breast
