a great easy, healthy, and cheap meal for those who are looking for a new way to eat some seafood. It is fairly easy to make and doesn't take long at all. Also, for all the guys out there looking to impress the girlfriends mother, this dish does wonders and is quite forgiving. Serve it with some home made margaritas (my mothers recipe will blow your mind and I have listed it on here) and maybe one of the Mexican deserts I have listed on here and you can't go wrong.

Ingredients

- Salmon steak/fillet (one per person) - 1/2 table spoon of brown sugar per salmon steak - butter Salsa Fresca with Mango - plum tomatoes(seeded and chopped) - white onion (chopped) - cilantro (chopped finely) - chile pepper (seeded and chopped) - 1 lime - salt - mango

Instructions

Salsa Fresca
- chop and mix white onion, chille, and plum tomatoes to a bowl
- 1/2 and onion to 3-4 plum tomatoes to 1 chille pepper
- finely chop and add cilantro to the bowl, as much as you see fit.
- easiest to do by placing leaves in a cup and chopping with
scissors
- squeeze lime over salsa (1 lime per above amount of ingredients)
- mix in salt to flavor as needed
- dice the mango up into small pieces and mix into salsa
- if you are making a large batch to last a while only add fruit to what you will use for this meal(otherwise fruit gets very soggy)

Cooking the Salmon
- pre-heat oven to 400 degrees
- place salmon on tin foil on a baking sheet
- place brown sugar, spread evenly, across the top of each salmon steak( half a table spoon per steak/fillet)
- place tray in oven
- check every 4-5 minutes and remove once all sugar has melted and salmon is pink
- heat a pan over high heat and place a small amount of butter in the pan
- sear the bottom and sides of each salmon steak in the very hot pan with butter to get the crispy exterior we get at restaurants.

serving
- place the salmon on a plate and liberally spread salsa fresca over it
