Vegan Cream of Broccoli Soup by cpeirson

Ingredients

large bunch of broccoli, cut in florets 1 med onion, finely chopped (or 3 leeks) 3.5 c vegetable broth 1 c milk (or almond milk) s&p 1 T fresh Thyme

Instructions

Bring all ingredients except for milk to a boil; reduce heat to a simmer and cook for 90 min. Let cool and puree in a blender. Return to saucepan and add milk and seasonings. Heat thoroughly and serve.
