Crispy Green Bean Salad with Tomatoes and Shallots by cpeirson

Ingredients

3/4 lb fresh green beans, trimmed EVOO 1 small clove garlic, chopped 2 beefsteak tomatoes, chopped 1 shallot, sliced 1T red wine vinegar s&p

Instructions

Cook green beans in 1 T EVOO in large skillet over med heat until crisp-tender, about 4-6 min. Add garlic and cook until fragrant, 30 sec. Transfer to a medium bowl and cool slightly. Add the tomatoes, shallot, vinegar, s&p and toss well.
