Cathy's Vegetable Stir Fry by cpeirson

One of the best dishes ever! Use any veggies in your frig or freezer.

Ingredients

1 T olive oil 1 Portobello mushroom, sliced 1 zucchini, sliced 1 onion, sliced 1 red, orange or yellow pepper, sliced 1 large carrot, diagonally sliced 1 T capers (optional) 1 c endamame (optional) 1 c frozen corn, peas, etc (optional) 1 clove garlic, minced fresh basil, chopped s&p to taste

Instructions

Heat olive oil in large skillet or wok. Add onion and cook until semi-transparent. Add other sliced vegetables, garlic and s&p. Stir fry until crisp-tender. Add any frozen vegetables, endamame and capers at the last minute. Garnish with basil.

Serve over fettuccini or just have as a side dish with your favorite grilled meat or fish.
