Crustless Quiche with Spinach, Sausage and Mushrooms by cpeirson

Ingredients

1 T EVOO 1/2 small onion, chopped 1/3 tube mild pork sausage 1 small frozen spinach, thawed and drained 1/2 c fresh mushrooms, chopped 4 oz cream cheese, room temp garlic powder to season 1/4 c shredded cheddar cheese 1/2 c shredded parmesan cheese 2 whole eggs 3 egg whites

Instructions

Preheat oven to 350. Grease a round quiche pan. In a med saucepan, heat oil and add onion and sausage; saute until cooked. Add spinach and mushrooms, continue cooking an additional few minutes. Remove from heat and stir in cream cheese and garlic powder. In a separate bowl, beat eggs then add the spinach/mushroom mixture. Pour into a prepared quiche pan. Top with cheeses. Bake 30 minutes until done.
