Cinco Queso Dip by cpeirson

Ingredients

1 c white wine 2 T minced shallots 2 C heavy cream 1 T shredded white cheddar cheese 1 T shredded yellow cheddar cheese 1 T shredded parmesan cheese 1 T shredded manchego cheese crushed red pepper to taste salt to taste

Instructions

In medium saucepan over med-high heat, cook wine and shallots until the mixture is reduced by half, about 5 minutes. Add cream, reduce heat to medium and cook until thick, about 10 minutes. Add the cheeses and cook another 2 minutes. Season to taste with salt and red pepper. Makes about 3 cups.
