Cucumber Sour Cream Dip (Candy) by cpeirson

Substitite 1 pt good quality yogurt or light sour cream for regular sour cream. Omit herbs and add 1 clove minced garlic and 1 T cumin. Or add 4 or 5 minced scallions, greens included. One to 2 T of dijon mustard can be added to either combination.


2 large cucumbers, peeled, seeded, and finely grated 2 pints sour cream 1/2 c fresh herbs (parsley, basil, chives, tarragon, mint, dill, etc. or a combination) s&p to taste


In a strainer, squeeze our excess liquid from cucumbers. Mix with sour cream, herbs and s&p. Refrigerate until ready to use.
