GRITS & HAM CASSEROLE by SOLSTICE

Ingredients

30 cups milk 7-1/2 cups quick-cooking grits 15 cups chopped cooked ham 10 cups shredded Cheddar cheese 30 eggs, lightly beaten 20 green onions, chopped 1-3/4 cups and 2 tablespoons chopped fresh parsley 1 tablespoon and 2 teaspoons garlic powder 1 tablespoon and 2 teaspoons salt 2-1/2 teaspoons ground black pepper

Instructions

Preheat the oven to 375 degrees F (190 degrees C).
Lightly grease a 2-quart baking dish.
Bring milk to a boil in a saucepan over medium-high heat. Stir in grits. Reduce heat to medium-low and simmer until the grits are thick, stirring often, about 5 minutes.
Stir ham, Cheddar cheese, eggs, green onion, parsley, garlic powder, salt, and black pepper into grits.
Transfer grit mixture to the prepared baking dish.
Bake in the preheated oven until set, about 25 minutes.
