POACHED ROCKFISH by SOLSTICE

Ingredients

2 TBSP salt 2/3 cup and 1 tablespoon chopped fresh tarragon 3 cups white win 4-1/2 bay leaf 2 Lbs Fresh leeks 2 ea quartered lemon 2 gallons water 40 ea fillet of rockfish

Instructions

cut fish into 4 oz portions
add water to stock pot
add lemon leeks tarragon white wine bay leaf & salt bring temp to 180 degrees.
place fish 3 at a time in pot cook 4 minutes
