"Ceviche"-style Shrimp by caneilson

Ingredients

4.5 oz. shrimp (approx 8-10) Juice of 2 limes 2T water 1/8 t. salt 1/8 t. cayenne pepper 1/8 t. paprika 2T. fresh chopped cilantro 1 vegetable (see below)

Instructions

Peel and steam shrimp. Chop roughly to make cubes of shrimp. Add paprika, salt, cayenne pepper and cilantro. Add juice of 2 limes. Stir and let sit for 1 hr to marinate.
Makes 2 servings: Can be served with green or red salsa (see recipe), on a bed of greens, or in celery/endive boats. Note: raw or undercooked seafood can cause food poisoning.
