Carrot Cake by agoldsm


1 c. oil 2 c. sugar 3 eggs, beaten 2 c. carrots grated finely 1 8oz can crushed pineapple undrained 2 t. vanilla 3 c. flour (you can use 1 c ww flour and 2 c regular flour if you want) 1 t. salt 1 t. bk soda 1 t. cinnamon 1 c. chopped pecans


heat oven to 350.
Mix oil, sugar, eggs, carrots, pineapple and vanilla
Add dry ingredients
Use a 9x13 or 2 round pans
Bake 35-40 min.
