Low Carb Carbonara by SteGondry

Ingredients

3 Chicken Fillets diced 4 strips of Bacon (cut off fat) White Onion (whole) Mushrooms (2 cups) 2 cloves of garlic 1 large sweet potato OR 3/4 courgettes Parsley Salt & Pepper

Instructions

Sautee bacon until crispy and leave on tissue to dry (add salt & pepper)
Dice onion and garlic and add to skillet w/FryLite
Chop chicken fillets and add to skillet when onion browns slightly
Chop mushrooms and add to skillet
Peel sweet potato/ courgette. Peel remainder into long strips to use instead of pasta. Add to skillet and mix gently
Add parsley (1 cup)
Add more salt and pepper and stir gently

Serve
