Slow Cooker Black Bean and Sweet Potato Chili by SarahEbel

Ingredients

2 Large Sweet Potatoes, diced 1 Red Pepper, diced 1 Red Onion 2 Adobo Chipotle Peppers, diced 4 tbsp Tomato Paste 4 cans Diced Tomatoes 1.50 tbsp(s), vegetable base. (Better than Bouillon) 1 can Pinto Beans, Drained and Rinsed 1 can Black Beans, Drained and Rinsed 2 TBS Cumin 1 TBS Chili Powder 2 garlic cloves, diced 2 Cups of water Salt and Pepper as needed

Instructions

Add everything into the slow cooker. Cook on high or low until the sweet potatoes are soft.
