Sunshine Salad by Jeremiah Jenkinz Yo

Ingredients

1 3/4 cups of orange juice 2 envelopes unflavored gelatin 2 Tbs. concentrated pineapple juice 1/4 cup lemon juice 1 1/2 cups carrots cut in 1" pieces 8 oz. rushed pineapple

Instructions

Pour into 5 cup blender:
1/2 cup cold orange juice
Sprinkle on top of juice and let stand 3-4 minutes:
2 envelopes gelatin
Heat and add to blender:
1 1/4 cups orange juice
Blend at low speed till gelatin completely dissolved, about, about 4 minutes
Add and blend at high speed till blended:
2 Tbs. concentrated pineapple juice
1/4 cup lemon juice
Add and chop in blender:
1 1/2 cups carrot pieces
Pour into 8" square glass dish, stir in 8 Oz. crushed pineapple in own juice. Chill till firm.
