Pineapple Zucchini Bread by Nette

Ingredients

3 Eggs 1 Cup Oil. (I will use 50/50 Coconut Oil/Applesauce) 2 Cups Sugar ( I will use Stevia in the Raw) 3 Cups Flour ( I will use Almond Flour or Coconut Flour) 3 tsp. vanilla 1 tsp. Baking Powder. 1 tsp. Baking Soda 1 tsp Salt 3 tsp. cinnamon 1 Cup Walnuts chopped (optional) 1 8 oz. can crushed pineapple "drained" 2 Cups Grated Zucchini

Instructions

Mix all the dry ingredients, cream the oil, sugar, vanilla and eggs. Add the creamed mixture to the dry ingredients, add the pineapple & nuts, then and add to two prepared (greased and floured) bread pans.

Bake at 350* for approximately 55 minutes. If you use a convection oven you may need to alter the baking time by a little less
