Chili con carne by MartinB

Ingredients

1 tbsp oil 1 large onion, finely chopped 1/2 red onion, finely chopped 1 red pepper, chopped 2 garlic cloves, peeled and chopped 1 tsp paprika 1 tsp chili flakes 1/2 tsp cayenne pepper 3 tsp ground cumin 500g lean minced beef 1 beef stock cube 3 tbsp red onion vinegar 400g can chopped tomatoes 1/2 tsp dried marjoram 2 tbsp tomato purée 200ml water 410g can red kidney beans a square or two of dark chocolate plain boiled long grain rice , to serve Creme freche, to serve

Instructions

Brown the mince, season and set aside.

Add the oil to the pan and fry the onions and pepper for around 5 minutes on a medium heat until they start to brown then add the mince back to the pan add the vinegar.

Add the spices, marjoram, garlic then the tomatoes, purée, kidney beans and stock cube. Add the chocolate stirring until it is melted then finally add the water. Simmer for 20 minutes and serve with rice and a spoon of creme freche.
