Meatball Tortellini Soup by M_Sheahan


1 Tbs Olive Oil 1 Small Onion finely chopped 2 stalks of celery 2 cloves of garlic 1 can crushed tomatoes 1 can tomato sauce 2 cans beef broth 1 tbs Italian Herbs 1 Tsp each salt and pepper 1 package (12 oz) pre-cooked meatballs 1/2 package frozen leaf spinach. squeezed dry and chopped 1 pkg (19 oz) cheese tortellini Parmesan cheese


Heat olive oil in pot over medium-high heat. Saute onion, celery, and garlic

Add crushed tomatoes, tomato sauce, broth, herbs, salt and pepper, meatballs and spinach. Bring to a boil then lower heat and simmer about 5 minutes.

Stir in tortellini, cook 3 to 5 minutes.
