Lentil Soup IP by
1 Large Onion, chopped 2 medium carrots, chopped 2 stalks of celery, chopped 4 cloves of garlic, minced 1 1/2 cups green lentils 1 can diced fire roasted tomatoes (14.5 oz can) 2 tsp Thyme 1 tsp Italian Seasoning Salt and Pepper to taste 4 cups chicken broth 4 cups baby spinach Grated Parmesan for garnish
Add everything to the IP except spinach and parmesan cheese. Set to high pressure for 18 minutes then do a quick release. Add spinach and serve with grated parmesan cheese.
