BEETROOT SALAD by Lalitha

Ingredients

Beetroot (grated)- 1 cup Capsicum(finely chopped)- ¼ cup Spring onion-2 Cabbage(grated)- ¼ cup Coriander leaves- a handful For the dressing: Shallot-2 Olive oil- 1tsp Vinegar- 1tsp Pepper – 1tsp Salt- to taste

Instructions

1. Add the grated beetroot, cabbage and capsicum in a bowl.
2. In a mortar and pestle combine the ingredients given for the dressing and crush them well.
3. Add required amount of salt to the vegetables and add the crushed dressing to it.
4. Garnish with few coriander leaves.
