Pear and Gorgonzola Bruschetta by Kim & Eric

Ingredients

2 pears, sliced 1/4 cup balsamic vinegar 1/8 cup honey About 1/2 lbs gorgonzola cheese, cubed Proscuitto (optional) Baguette, toasted and sliced Some light cream, enough to give the cheese a smooth texture

Instructions

1. Combine the balsamic vinegar and honey in a medium saucepan on medium heat. Add the pears, stirring until the pears are covered completely. Cover and simmer on low heat until the pears are tender.

2. In a medium pot, melt the cheese and add light cream as necessary until the cheese is a spreadable but still a firm consistency.

3. If you choose to use prosciutto, cook in a pan and cut it into slices that will fit the baguettes.

4. Once the pears, cheese, and prosciutto are all ready. Spread the cheese on a baguette slice, add a slice of prosciutto and top with a pear. Serve.
