Bao buns by Khtqkc

Ingredients

Makes 6-8 Wet 1/6 C warm water 1/4 C warm milk 1/2 T yeast 1 T sugar 1 T veg oil Dry 1 1/4 flour 1/4 t b powder 1/8 t salt 1 T sugar

Instructions

Combine wet, let yeast proof 5-10 min
Combine dry in stand mixer
Add wet to dry, start dough hook on low til mixed; then med speed til it's a dough shape; then 3 min on med
Let rise 1.5-2 hrs
roll out w/o flour, cut into 2-inch circles (turn leftovers into ball and let rest before rolling it out)
brush oil 1 side, fold in half, roll lightly to flatten, put in steamer (lined w/ parchment or coffee filter and brushed w/ oil)
Cover & rise 20 min
Steam 8-12 min
Turn off, lean lid and let sit in cracked steamer for 3 min
