Hot Chocolate Souffles by Halle

baking takes 15-20 minutes cooking takes 15 minutes serves 4 400*F/200*C

Ingredients

4oz(115g) fine dark chocolate Butter for greasing ramekins Scant 1/2 cup(55g) superfine sugar 5 eggs pinch of salt Confectioners sugar 3 bowls-saucepan-wooden spoon-4 ramekins-Whisk or electric mixer-large metal spoon-small sieve or tea trainer

Instructions

1-Set the oven.Break the chocolate into a bowl.Melt it over a saucepan of simmering water,stirring until smooth.

2-Remove the chocolate sfrom the heat.Grease the four ramekins lightly and sprinkle with a little of thensuperfine sugar.

3-Seperate the eggs into two bowls.Stir the rest of the superfine sugar and flour egg yolks into the melted chocolate.

4-Whisk all five eggs whites with a pinch of salt until they form stiff peaks.Then fold them gently into the chocolate.

5-Fill the ramekins until nearly full.Bake for 15 minutes until they rise and puff up.Sprinkle with confectioners sugar.
