Minty Pea Soup by

Serves 4
Ingredients
4 scallions
4 tablespoons butter
1 1/3 cups(450ml) water
1 lb(450g)frozen peas
1 1/4 cups(300ml) light cream or milk
2 teaspoons chopped mint or chives
Salt and pepper
Cutting board-Sharp knife-Large saucepan-Woodenn spoon-Spoon-Blender or food processor
Instructions
1-Trim the scallions and slice them finely.Melt the butter in a saucepan.Cook the onions over low heat until soft.
2-Add the water.Bring it to a boil,then add the peas.Simme for 3 to 4 minutes until the peas are tender.
3-Let the soup cool for a few minutes,then pour it into a blender.Put on the lid and blend until the soup is smooth.
4-return the soup to the saucepan and stir in the cream and chopped mint or chives.Season and reheat gently.
